The big ones I have heard about in the US are Interlochen, Brevard, and Sewanee. These are all multi-week camps to my knowledge, and should be very good experiences.

In the US, off the top of my head...
Music Academy of the West
Aspen Music Festival
Sarasota Music Festival
Tanglewood Music Festival
Eastern Music Festival
Bowdoin Music Festival
These are among the most reputable/competitve ones. I've heard Aspen is one of the most enjoyable camps, but it can be quite long if you get a fellowship.
