I apologize, when I first read the post I thought you asked what "big piece" had a good Bb clarinet solo. Hence my funny (IMO) response.
For Eb clarinet:
Ravel Daphnes and Chloe Suite 1&2
Shostakovitch Symphony No. ___ (uhhhh....ALL of them I think) Especially 5.
Till Eulenspiegel's Merry Pranks (uhhhhh...ALL of it, I think)

I do know there are more; just can't think of 'em right now...
*Yeah...I was here when it said "clarinet" and I wrote the Berlioz down even then...and many many solos are for A too, BTW...*

The most popular Eb part is of course, the most frequently played Shostakovich 5th symphony, a part which is given to every auditionee. As mentioned, El Salon Mexico, Coplands work( which Koussevitsky hated to conduct, he wanted it rebarred into 4/4), performed famously and with originality by my teacher Rosario Mazzeo, which became his trademark along with the Bass Clarinet Solo in the William Schumann 3rd Symphony. The Boston Symphony during these years played first peformances of many many important works for orchestra, as commissioned by Koussevitsky, including the Bartok Concerto for Orchestra.
the polka" The Golden Age" has another extensive exposed Eb solo.

I'd add Bartok Marvelous Mandarin, Ravel Piano Concerto and Concerto for the Left Hand, Hindemith opera "Cardillac", Berg's Wozzeck and Britten's Le Prince de Pagodas".
Smaller but imprtant parts in Respighi Roman Festivals (last movement, a very cool part, my first one as the Eefer in a symphony although the part is written for D clarinet!) and Schoenberg Violin Concrto (some stratospheric notes!).
Lots of orther symphony parts have Eefer and many of these involve either playing along with violins or the flutes in the melody lines, somec quite complicated. Often the tutti parts are as bad as the solos! Most are fun in a sort of masochistic way. The only part that gives me thevheebie jeebies is the descending G, F. Eb in the first movement of Shiostakovich 5 with the piccolio (in ocrtaves). I've never heard it played in tune. Of course it was the piccolo's fault!
