 Mouthpiece table: concave vs flat

What is the effect upon reed and subquently sound.............

Some mp blanks are supplied flat and a maker/refacer reworks the table to be concave.
Yet, some mp blanks are supplied with a concave table and the maker/refacer works it flat .

Seemingly, this is not limited to a Kaspar vs Chedville design.
