When playing in hot or humid environments (like on my school stage, for example), I tend to become very congested, which in turns inhibits my ability to play. Does anyone know how I can possibly resolve this problem? Is it perhaps the way I breathe and the extent to which my throat is opened while I play? Any opinions appreciated.

Same thing happens to me (I have bad allergies). A prophylactic squirt of Afrin before playing keeps my nasal passages open.
Be careful not to use it too frequently, though...you can get what's known as a "rebound effect", which makes the congestion worse.

See a doctor.
In the meantime, if you are looking for a non-pharmaceutical solution, try Breathe Right nasal strips.

You may also try this alternative treatment. It sounds uncomfortable, but it's not bad at all; I have tried it and it has worked really well before for me. I am not sure how the results of a treatment would hold up in heat, but here you go anyway:
