I found a fascinating scientific paper on-line, in which the playability of reeds is compared with measurements of their natural vibrational properties. Some strong and interesting correlations came out:
1. Seems (as several have said on this BB) that the main criterion for playability is *left-right balance* of the reed.
2. A secondary criterion for 'musicality' is the relation between bending stiffness and twisting stiffness of the reed. Presumably this relates to the cut and material of the reed.
Reference is:
'Musical quality assessment of clarinet reeds using optical holography',
Pinard, F., Laine, B. & Vach, H.,
J. Acoust. Soc. Am. 113(3), March 2003 pp. 1736-1742.
(you'll have to pay, unfortunately, unless you've got an academic library handy)
I'm off to sand me some reeds... :-)

I'd be willing to pay - how can I get my hands on this paper?
Would be especially handy since a) I need to learn more about reeds and b) I'm writing a paper too this year!

Google the paper title - the fourth link down (or so - the '.aip.org' one, at any rate) has a .pdf download option.

I am prompted with a login screen.
Looks as if I haven't got those magic M.C. cookies on my PC...

I forgot ... the company that pays my bills probably subscribes to everything ... but in any case, the free subscription will get you the paper.

It still isn't working - nothing there free. Logged in, and when clicking on the link it opens up the log in again. I clicked on order it (fast) and could probably buy it, but no free article visible.
