Well today I found an old Noblet E Flat mouthpiece that has that Greek scrolling around the mouthpiece that I have seen on Chedevilles. It says made in France and has a 2V marking on it. What do you think? Is it worth refacing?

Yes, it's Chedeville blank from the 30s, 40s. Definitely better blank than Buffet/Chedevilles from the 70s

If you intend to do the refacing yourself, why not?
If you intend to have a more experienced hand do the work on your behalf, they may have a particular blank with which they are more familiar.
The departed Everett Matson preferred Selmer HS* mouthpieces as his raw material - they were predictable and he found reproducible results satisfying.
If you're going to spend more than $100 USD, you may want to consider buying something directly from the many qualified makers currently at work.
