Question at the end, the situation leading up to it, if you're interested in the beginning...
Since the recent purchase of the 10G (mentioned in another thread), I retired out all my mouthpieces, and found that (I should've expected it) the gigliotti P mouthpiece fit it best (a newer model, refaced by dave spiegelthal). Plus, with all the practicing that I've been doing, I must've toughened up my embouchure, because now I'm using Vandoren V12 5s. Of course with that box, some are too hard, and some are actually too soft (time to invest in a reed clipper), but that is neither here nor there.
As of now I'm going to use that as my primary. I have another gigliotti P mouthpiece that CAME with the instrument. Vintage, on an otto link blank. However on this one, all the vandoren reeds are too hard. Which is odd. I guess they must have drastically changed the "P" facing to be even closer of a tip opening when the newer model came out.
Q:I'm assuming it'd be best to have two VERY similar mouthpieces, that take the same or very similar reed. One as primary, and if that fails, pull out a backup and any reed you have (cause it will fit both). So is it possible to make a mouthpiece opening more closed? So that it will fit a HARDER reed? Or is it best to try out some of the newer model gigliotti's until I find one comparable and just get rid of the old 'vintage' gigliotti? Thanks in advance.

IMO the best solution would be to send both Gigliotti P mouthpieces to Dave Spiegelthal and ask him to match your primary mouthpiece with the one that came with the instrument. If he remembers what exactly he did with the first one you may not need to send both.

IMO (and with all due respect to Dave) do no such thing. Those original Link-based Gigliottis are extraordinarily good mouthpieces, made specifically for Mr. Gigliotti. I have played on several of them in my career and they are fine just the way they were made. Try some different reeds with it and you may find you like it a lot better than your primary.
