A while back, there was a CD set called "Orchestra War Horses." The marketing was that these are the orchestral pieces over the past 4 hundred years that every knew but never had had the opportunity to collect.
My question:
What are the clarinet "War Horses????" Those that are reasonably well known, even if the public never knew the name or even necessarily knew that it involved a clarinet.
Let us start a list!
My contribution is:
Clarinet Concerto, Mozart, K.622 (a bit too obvious, but I love it!)

Ah, orchestral war horses, a subject dear to my heart as they were the basis of the Lone Ranger radio background music. I disagree,however, that the Mozart should be attached in anyway to the subject either as orchestral or clarinet specific. All of the orchestral warhorses contain challenging and memorable clarinet passages, however. I guess the terminology "clarinet warhorses" just doesn't sit comfortably with me.
I understand your aim however.
