Sometimes after I've been playing, my soft pallet seems to be a little inflamed, and at the gums can become a little sore. I've never had this before, what bad habit have I got now? Any help greatly appreciated.

Nevertheless, it could be an allergy. Allergies can develop at any time of life. Or possibly the reed manufacturers are treating the reeds with something new.
If it happens most times you play, worth trying a plastic reed and mouthpiece to see whether that stops it.
If it only happens occasionally, then another possibility is that you are allergic to grenadilla (or bore oil, but I recall you don't use bore oil.) So long as you keep the instrument upright, then you won't contaminate the mouthpiece with oil from the wood. If you put the instrument down flat, then moisture may run back into the mouthpiece and cause the problem.
Just a wild theory - I have no evidence for this, but no-one seems to have a better explanation.

That's the most plausable explanation - since I just changed to a new Leblanc Concerto about 3 months ago after playing on Buffet R13 for a few years. (You just got a Concerto too if I remember correctly!)
