What is the difference between more open mouthpieces to more closed ones? How does it effect the sound? and etc.

The openness or closedness of a mouthpiece refers to the curvature of the tip of the mouthpiece. The more open it is the "wider" the space between the reed and the mouthpiece when the reed is in place. The more closed it is the less space.

Many believe that a more open mouthpiece can give you a more flexible sound as you can use softer reeds. On a closed mouthpiece you will need harder reeds. As far as sound goes, a capable clarinetist should be able to make any sound they want on either mouthpiece, though reed selection may have to be different.
