Good question.
For all you people telling me to gouge dry, I do. I find that when I gouge dry, it tends to "shave" the cane off, rather than wet which tends to "tear" the cane off. This is particularly true when you use a softer cane, particularly my Bonazza. But yes, I am dry gouging on Ghys, Bonazza, and RDG R/GO and am getting much better results than wet.
I'm also twisting the pieces back as many of you suggested, however some are beyond repair, and enough twisting won't get it back to straight.
The main concern about a straight piece of cane is to get an even gouge from top to bottom, side, to side. I try to get a piece straight enough to gouge evenly. Once gouged, I measure both ends, middle, and side to side to ensure evenness.
