Hello!
So I'm looking in picking up the oboe. I have no idea how well it will turn out, but hey you never know if you don't a least get the instrument. What are some popular/good beginner oboes that you cant go wrong with? Preferably something thats more dominant in europe. Btw I will be looking for a used one. Something up to 600 euros would be ideal.

See if you can rent a good quality student oboe to begin with rather than buying one outright so if you don't get on with it, you can return it and that will cost you considerably less than if you bought one.
The only oboes up to €600 are either new Chinese ones of questionable quality or used student models in less than good condition. €600 should find you a decent rental instrument from a reputable maker (either new or used), plenty of reeds and also pay for a lot of lessons to get you going for a good while.

There are a few Yamaha 211 on ebay for that price, I read you can't really go wrong with a yamaha?

You'll be fine with a Yamaha.
With any instruments, best policy is to stick with well known and well respected makes that have heritage.
