You guys must have aggressive water there in Arizona. I have to wait an hour before the stuff sinks, even when I'm repeatedly knocking the bubbles off.
(Probably has to do more with cane differences than water differences. The same goes for splitting. Some cane will split no matter how short or long you soak it. The stuff I get (Dunkel & Severson "hard") can be oversoaked now and then (I get distracted) without ill effect. Once I forgot and let some go six hours. Then, finally, I had problems.)
