I don't know that you need to write them out, but yes, thirds are useful for the figures you get in Greek/Turkish/Balkan/Klezmer. Especially ascending, with this second note a "ghost note": e (g#) f (a) g# (b), etc. with the parenthesis notes ghosted, or barely played for klezmer. Descending for especially for Greek/Turkish b (c) a (b) g# (a), etc. Playing the scales with a mordent on each note is also a useful exercise I would think.
