A guillotine is used during the preliminary preparation of cane. Guillotines are used to cut a piece of tube cane to the proper size so that it will fit in the gouging bed. Guillotines are not used in the reed making process. I don't know anyone who would want to subject a really good sharp knife to the grunt work of cutting really thick and hard tube cane to size for pre-gouging, I also don't think you would get nice clean cuts using a knife as you do using a guillotine.
