I use:
-a 625 grit diamond stone for straigtening out the knife every 5-6 months
-4000 grit Japanese water stone (I do most of my work here)
-8000 grit ceramic stone (I use this to refine the edge, and to touch up while scraping)
When using the ceramic only do one or two strokes to refine the burr, as doing more will turn the burr over too far.
