Mark - I think you can get a rough feel for the characteristics of the cane just as you do when first scraping. Is the cane firm, mushy, brittle, etc? And the sharper the blade, the more easily you can distinguish these characteristics - a dull blade obscures everything but the force necessary to shove it through the cane...
