What sort of ensemble are you talking about? For any genre, something of interest can be found among the great mounds of elementary editions.
In the case of clarinet with piano, one of the few Christmas collections I've found that ads more of interest to the clarinet part is "Christmas Joy" by Stephen Bulla, published by Curnow. The clarinet book comes with a play-along CD, but a piano accompaniment book is available. The difficulty of the clarinet part is only at an intermediate level, but there's more interesting interplay between the instruments than in most published Christmas arrangements.
