Don't know of anything original for this lineup, but here are two ideas for "creative appropriation":

Speers "Grundrichtiger Unterricht ..." from 1697 contains two one-movememnt "sonatas" for three bassoons that could be worth a try. Haven't played the myself but they look quite mangeable. You can find the music on IMSLP under a Creative Commons Licence.

And of course, you could experiment with the Mozart Trios for three Basset Horns, KV 439. Again the music is available on IMSLP.
