Every conservatory will have a theory and piano proficiency requirement for graduation. It's helpful though not essential to have some knowledge of both when you enter.
If you want to be a performer, particularly in jazz, a thorough understanding of theory is essential. Hearing the chords is the foundation of jazz performance. Piano proficiency helps your harmonic sense because it gives you the physical feel of the chords. Playing at least a little piano is one of the things that's expected of a professional musician.
