The Hadcock books has the speed at 112, which feels a bit too much of a gallop for me to get my fingers around the E flat part! Is this tempo accurate, or is there a better more commonly used tempo?

Best thing would probably be to find several YouTube recordings and see what tempos various conductors choose. There will be a range, notwithstanding Hadcock's recommendation.

I'm not home now to check but listening to a decent orchestra, decent known conductor will give you an idea even though some do things faster or slower that others. I do know that some parts of Til do go rather fast who ever is conducting it. I've played it numerous times.
