 Breathing problems

I have done a total of 3 AMEB exams in my life (Grade 6, 7, 8), and I had the exact same problem in all 3 of them. (It happened with my List A piece in all of them)
The problem was that as I was playing, my throat got clogged up with phlegm and my breath only went out of my nose, so I couldn't get a sound out of my clarinet. This never, ever happens to me at any other time. (Except once or twice when I've had a cold and been playing for extended periods)
What would be some things that could cause this?
