Can anyone give me any tips for composing a woodwind trio for flute, oboe, & clarinet or tips for a quintet featuring flute, oboe, clarinet, alto sax, and bassoon. Any comments welcomed

Oh my!! That sounds more difficult than writing for full orchestra (which I do). I would suggest doing research on different quintets and trios for some ideas on what part each instrument would play. Who would share the melody? who would play a high accompinament and countermelodies? WHo would play the bass chords? Plan it out in advance and wait for inspiration.
The typical quintet has a horn instead of a sax, doesn't it? Or a bass clarinet instead of a bassoon? something like that. Expand your options!

The best piece of advice i can offer you about the trio, is to be very careful about how you use the oboe. It's volume is naturally louder than that of the flute and the clarinet, and it's tone cuts through the others. While this can be very effective, it can also be dangerous.
ALso, be careful how you use the alto saxophone, and make sure you get a player with good restraint, who can play well at low dynamics.
