I think I'm straying a tad off topic, BUT -
can anyome explain what "sequencing" means in the context of looking at soft ware for music?

Sequencing is literally creating the "sequence" of commands sent to a MIDI device. Pitch commands, patch commands, on/off commands, pitch bend commands, sustain commands, volume commands, etc. The same things (plus a few more) that performers do.

A software sequencer will allow you to input music onto the computer by using the computer keyboard, mouse, or midi keyboard (a synth, for example). Then you can edit the music to your taste and play if back using the computer's sound card.
