2 quick questions:
1) When recording music for all state, it can be done in multiple tracks. So, I can record different excerpts in different days. How would you go along recording if you have to record multiple excerpts? Keep on practicing each excerpt and doing them in a couple of days or just focusing on 1 excerpt for one entire session, perfecting it, and then forgetting about it?
2) During rehearsal, the clarinet can accumulate spit on the ground. Not necessarily pleasing when the floor is black and people are changing seats. Do people swab during rehearsal to get rid of it? A cloth?

I would record in whatever manner gives you the best results. No one will care if you could nail all the excerpts in a row, they just want your best recordings.
Don't worry about condensation on the foor. If you want to feel better about the drips under your clarinet, check out the floor around the trombones.

Will warming up the instrument before I play reduce the spit? I think that warming up the instrument will ensure that less condensation forms.
Also, if the sound is inconsistent in the recording because I use a different reed on a different day, will it be an issue?

There really is no spit, but condensation. The only thing that lessens the effect is drier, warmer atmospheric conditions. Just swab more.
As for the recordings, my feeling is that each excerpt will have its own character anyway so even differences that you may not have intended will not be a bad thing. Just be consistent with your levels, mic and distance from said mic.
