By finding a sax site somewhere ;^) - or, as I commonly tell people, check www.ebay.com for comparable instruments to see what they're going for.

Steve Goodson may be a good bet, as would someone like Paul Cohen, who is a collector of vintage saxes (among many other sax related accomplishments), at the Manhattan School of Music. He used to write a column for the Saxophone Journal (he may still be writing it, I just haven't seen the SJ recently), so you might be able to get in touch with him by contacting Dorn Publications.
Checking E-bay probably won't be of much use as pre-1900 bari's are uncommon enough that not too many will show up. Note that it might be more of a curiosity than a rare collectible, so it might be worth surprisingly little (not particularly collectible, not particularly useful).
Does it play in tune with A=440, or is it one of the old high-pitch (about A=456) instruments?

I play a one octave key swiss military bari sax from Buffet Crampon. And am very happy about the instrument.
I find this instrument superior to any Yamaha / Yanagisawa bari sax.
I can't tell you how much it's worth, but who cares really if it has a nice sound.
I know that at a time, buffet was the only saxophone maker that could compete against selmer, and that's also probably why the swiss army bought Buffet saxes for their miltary band. (Swiss army buys very good instruments)
Take good care of yours..
Best wishes
