I've recently aquired a Evette Buffet Crampon Master Model and am hoping to learn some details about it.
No R-13, E-11 on it, just the number
K5840
Logo is Evette & Schaeffer, Paris, France, Modele Buffet-Crampon, Made In France, Master Model
That's all that's on it. It is obviously wood and I'm guessing nickel keys.

Actually you have an Evette & Schaeffer model, which was a step up from the "Evette," made at the same time. Buffet considered the E&S a high-end intermediate model and made it in their main factory with the R13. According to their serial number list, they made yours in 1954. If you don't see any plating wear (and I suspect you don't), you probably have unplated "nickle-silver" keys. AFAIK from what I have seen about E&S Master Models from this period, yours has the old Buffet (cylindrical) "master bore" rather than the polycylindrical bore Buffet was introducing around this time on the R13. The immediate successor to the E&S was the E13. However, the E13 (as well as E&S clarinets made several years after yours) have significant design improvements so I think it's stretching things to say it is equivalent to a modern E13 (others will disagree with me). IMO, it's a decent clarinet by today's standards and, in good playing condition, should be a satisfactory instrument for a beginning student or an adult amateur.
FWIW, if you have the original E&S mouthpiece and it has one ligature line at the top and three at the bottom, your mouthpiece was made by Chedeville. These are fairly common, however, and don't sell for anywhere near what a Chedeville will bring. Some think they are very good mouthpieces (or, at least, mouthpiece blanks worth refacing), however.
