Goodman played all the clarinet, except for the very early beginner
stuff, which he did not want to do, and which was done by
Allen. This is well known and documented. Goodman got credit for
the soundtrack album, anyway. Steve Allen, a talented musician,
probably played clarinet about as well as he acted, or even worse,
but was not completely unfamiliar with it.

I understand that Robert DeNiro took sax lessons from Georgie Auld
for months in order to get the right look when filming New York, New
York. Rumor has it he was a quick study and actually COULD play the
parts, but they used Auld's dubs on the film.
