My guess is that you're writing your email in something like Word. Word
tries to use typesetter apostrophes and double quote marks, which are
different from the straight second ' and minute " marks that computers
have traditionally used. Those more sophisticated marks have a
different character code, which is outside of the "universal" 7-bit
ASCII that the list software understands, so it becomes an unknown
character.
