Various GUIs can output to Lilypond, or interface with it to some
degree. Another one is called Denemo. My experience is, though, that
their methods are rather basic. If you want the full notational
possibility, you have to get your hands dirty in the Lilypond syntax.

... which isn't too difficult, once you get the hang of it. If you can
deal with LaTeX, you'll be fine.

The major difficulty, like LaTeX, is customising the output in terms of
font, layout, whatever---basically, the overall style of the document.
For example, I'd like to be able to set Lilypond up to produce output
like Universal Edition's contemporary scores. I don't know how.
