Yes, this is exactly what I see as missing too, although you can compile
to MIDI from Lilypond.

On the other hand, I wonder if for pure experimentation something
altogether different might be more worthwhile, like some of the audio
sequencers. I don't know; it's been a while since I've really engaged
with computer composition tools.
