What do you really need to do?
Do you need to make a CD recording or do you need to make a casette or both?
What is the reason for wanting to use a laptop instead of a real
cassette recorder?
There are portable mixing boards that cost $100 that make great
recordings on cassette
and they moved on up to making CD versions of those boards.

And
any PC that can burn a CD can easily be used to covert taped music to CD
so I would recommend that you consider using the right tool for the job.
All laptop computers are not created equal so anyone who recommends a
laptop to you
is not going to be exacty what each of your students laptop do have
useful for them.
This makes a problem of you saying "this is how you do this" to anyone.
And then there is the cost.
You can't get a laptop for less than $600 new.
You probably will look over laptops that cost $1000 or more.
Why bother spending on computing power when what you want is recording
power?
$800 buys a CD mixer burner so why use a computer at all?

And then there is FREE.
I use linux.
I get PCs for free when stupid people throw out a perfectly good PC
because a virus infected
and destroyed the WINDOWS operating system and made the PC useless.
We take those PCs and wipe out the hard drive and load linux on it and
then have a perfectly good
working PC and KNOPPIX LINUX has AUDACITY music recording software and
K3B CD burner software.
So.. from the trash heap to the desktop..... without spend a penny you
can record music and burn CDs.
