OK, just to clear this up (or maybe muddy the waters, knowing me): There
are at least three senses of the word "catholic":

1. universal
2. subscribing to a certain body of doctrines and practices, such as the
sacraments, the three orders of ministry (bishops, priests, and deacons),
the historic episcopacy (or "apostolic succession"), and so on
3. of or pertaining to the church of Rome

The creeds, which most Christians say, use the first sense. We Anglicans
consider ourselves to be catholic in the first and second senses, though
sadly not in communion with Rome. I was taught to refer to our Roman
friends as "Roman Catholics" and never merely "Catholics"; if it is
necessary to abbreviate, we were told, use "Roman".

Cheers,
--Joe
