The songs included in a fake book depend to a large extent on what
copyrighted songs are available readily to the publisher of that fake
book.
All three books you mentioned are published by Hal Leonard. The other
biggest umbrella of popular song publishing is the Warner Brothers
catalog.
You'll find a lot of gaps filled by picking up fake books published
by WB.
For example, among the 250 songs in the Just Standards Real Book
are two you asked after (Stardust and Embraceable You).

As with the Hal Leonard books, WB has some books with over a
thousand songs in tiny notation (I think one is called The Best Fake
Book
Ever) and others that have fewer songs, but with larger notation and
letter
chords. The latter is more likely to include rarely-heard verses
rather than
just the chorus of familiar songs.

I'm curious if publishers in other countries (such as France, Germany,
and Italy) have put out similar fake books loaded with songs popular
in their languages over the years.
