Sy, this can be true in both directions for some people --- which is to
say the aficionados and unimaginative players of classical music can be
unaware of musical elements as they listen or play also --- but this
unbalance between 'vernacular' and 'art' is far from universal.

You should consider that what you have named "art" music is also 'older'
music from which much of the 'junk' has been pruned because it didn't
appeal, whereas much of the "vernacular" music that you hear today is
newer junk music which you and other listeners/players are (and will be,
for a few decades) in the process of pruning. It's inconsistent to
compare what remains in circulation after 200 years with what is just
now being played for the first time. For example, Dave Brubeck or
Louis Armstrong vs. "The Howling Punk Rock Trash Monkeys".
