It _is_ astonishing. They don't sample every instrument at every pitch and
at every volume level or with different amounts of vibrato or articulation
or ...

That's simulated later. They start with a very limited number of samples
and perform mathematical magic to them to make it appear as if they have a
lot more samples stored. Ray Kurzweil pioneered the sampling techniques
and algorithms, and even today the Kurzweil piano samples & synthesis of
the early years rank pretty high.
