Unpitched percussion in MIDI corresponds to one particular MIDI patch.
But the "absolute" MIDI notes don't correspond to what you want to
notate, so Finale cheats through the use of what are called "Percussion
Maps".

So, first of all, work out what the "absolute" pitch is of the note you
are trying to enter.

Now, select the Staff Attributes of the percussion staff in question.
At the bottom of the box you should see a little box saying "Notation
style: percussion", and a button with "Select" on it next to that.
Click "select". That will take you to Percussion Map Selection. Click
on the percussion instrument you want and select "edit".

You'll get a list of notes up. Check whether the note you entered
originally has an asterisk (*) next to it; if not, click on it and then
click the tick-box that says "Highlighted note", which will put an
asterisk there. Then you can use the other options to give that note a
name (to remind you what sound it is), set the notehead to use, and to
set the "staff position", which is the really important bit: it fixes
where the note appears on the stave. Setting that last option to the
right value will give you the result you want.

Drum-rolls are notated using the Articulation Tool. Click on this,
click on the note you want the drumroll on, and select the standard
"three slash" notation to apply to the note.
