Not the audience of Mozart's time! What you are noting is the
clearly established fact that audiences of today are not nearly
as well educated musically as were the audiences of Mozart's
time. Then, then knew exactly what to expect and what all the
devices were. It is because of today's failure to be well
educated musically that something as flawed as Sussmayr's
completion of the Requiem is looked at as if it is without flaw.
A parallel 5th in Mozart's time would have raised eyebrows. Not
today.

Another thought, from the audience's point of view:

Many people in the audience would not be familiar with what the
composer
actually wrote and therefore would not be aware of the
distinction
between cadenza and non-cadenza phrases.
