George, since you are in Germany (where the pizza is not the
Chicago variety), we can begin to talk about a lifetime of
maultaschen or zwetschentorte. There is a rest stop on the
autobahn south of the Frankfurt airport where their
zwetschentorte brings tears to my eyes. And whenever I drive
from Frankfurt airport to a place I keep near Strasbourg, I
always stop there if zwetschentorte is in season.
For those not in the know, maultaschen are large, triangular
shaped meat-filled ravioli that are served in broth. Each one
must weigh 3 kilos (by German Federal law) and no one has ever
eaten two of them in immediate succession. It is kind of like a 7
pound ravioli or wonton or kreple (singular for kreplach). And
zwetschentorte is a plum tart made with fresh plums, a custard
underpinning and a crust that is out of this world. I like
German cooking (though it has a reputation of being as solid as
the German automobiles), but I live in France for a few months
each year whenever I can get away. And in Alsace one eats as well
as anywhere on the planet. The pizza is also pretty good there.
