A "USDA steak" means that the beef has been inspected by the U.S. Dept. of
Agriculture and is safe to eat. But just because it has been inspected
doesn't necessarily mean it is good, since cattleman and ranchers are
allowed to feed growth hormones, antibiotics, etc to animals to prepare
them for slaughter. The smart shopper looks beyond the USDA for good
quality meat.
