USDA is the term for United State Department of Agriculture, which means the
beef is inspected by an USDA inspector.

Top grade of beef is Prime Aged,, Choice, Non Choice or no roll, as it
doesn't get the inspectors ink roll with USDA approved, and finally Utility
which is junk. So those are the basic grades of meat in the US, and I had
no idea that my food knowledge, would ever come up on a group for clarinets,
as food sales is my background, not playing professionally like many of you.
Actually there about 10 grades or of meat in the USA.

And remember the next time you eat a 24 oz porterhouse, the USDA guidelines
for daily in take of beef is 3 ozs. And your heart will thank you too!
