I think this is a bad idea. Your first obligation, as a musician, is to the
*music* -- not yourself. While I am not overly familiar with this piece, the
cuts you describe would appear to render the music a mish-mash. This is a
cheat, and thus does not serve the music well at all.

While it may not seem like it today, you are cheating yourself as well. Playing
the Rossini as you describe might give you some satisfaction today; but several
years from now you will almost certainly not look back on that performance with
pride. The passage of time has a way of bringing a different perspective to
events.

This should be an opportunity for you to show what you can do, not hide what
you can't do. Perhaps the Rossini is better left for next year, when you will
have had time to work it up so you can perform it properly. Instead, pick a
piece that you can play properly, and that still highlights your abilities.
(How about the lovely "Pastorale Cevenole" by Louis Cahuzac?)
