Which mouthpiece took away what sound? I have a 5RVLyre and have never had a
problem with a breathy sound with my V12s. Some of my students do have this
problem with the same set-up, but I am not blaming the mouthpiece or the
reeds.

One of my students switched to a Legere and sounded immediately better.
Methinks this has more to do with the reed he was playing on before the
switch than the fact that the Legere is somehow intrinsically better. For
some reason, my students tend to favor reeds that are too hard, so when they
play, only about half the note tends to speak, covered up mostly by the
sound of rushing noise.
