There's another issue involved --- namely, the recording isn't a
completely accurate copy of what the audience heard or how the performer
played.

Recording engineers make (must make) decisions about what the goal of
the recording is. Details of microphone types and placement and mixing
thereof, quality of electronic components, emphasizing or removing
reverberations of the auditorium, etc.

It's easy to imagine that electronic practicalities could either add or
delete a gentle vibrato, shift a clarinet's tone toward or away from the
higher partials, etc.
