I have placed my classical recommendations at the bottom of this list
simply because I expect everyone else to list their classical favorites
first and (perhaps) to overemphasize a particular category of music.
All of these are in print to the best of my knowledge:

Jazz ensembles w/clarinet solos --- anything by Pete Fountain or Buddy
de Franco

Full non-classical orchestra --- Benny Goodman

Klezmer --- Margot Leverett, "The Art of Klezmer Clarinet", Crossroads
4296 --- you may never play klezmer yourself, but listening to it will
show you a different use of the clarinet, which cannot (should not) be
ignored --- it's simply beautiful music

Mozart on period instruments --- Mozart Clarinet Concerto, Academy of
Ancient Music, Decca 414339-2 --- you may never play a basset horn or
basset clarinet yourself, but listening to Mozart's concerto on period
instruments is an absolutely necessary part of any clarinetist's
education

Classical --- Emma Johnson, "Encores", Academy CD DCA 800

Classical --- Martin Powell, "Son et Lumiere" --- Not available at major
stores, but Martin Powell posts here occasionally, and his CD is sold
somewhere on the Internet, this recording is truly worth hearing,
someone on the list will probably tell you how to obtain it.

Classical (contemporary compositions, including for Eb clarinet) --- The
Clarinet Music of Sean Osborn, sold at http://www.mp3.com

Classical --- David Shifrin, "Two Brahms Soirees", Delos DE3706 --- more
of the best!

Classical (a broad assortment of clarinet compositions that aren't heard
so often) --- David Hattner, "The Clarinetist Composer", go to
Northbranch Records' web page to order this

....well, that's nine recommendations already, and I was just getting
started.
