For some kinds of music... My microphone techniques really change on the
kinds of music I'm recording. Some stuff is recorded via multi-mic
techniques, some use a stereo pair out front, some a combination.

I'll agree, though, that often (but not always) a basic stereo pair will
give you the sonic information you need to make a recording. Different
stereo micing techniques place you varying amounts on or off axis of the
capsules. One technique that I use has one capsule that is completely on
axis and on that is completely off (facing 90-degrees to the performer).
