True, but then when the harmony changes to the subdominant in either the 2nd
or 5th measure of the blues structure, then the Eb is the minor seventh of
that chord. What many performers do on instruments that permit it (voice,
trombone, saxophone, etc.) is to play a pitch somewhere between the minor
third and the major third. That would be the true "blue note" for that
scale degree. Where that isn't possible, as on the piano, players often
play both the major and minor 3rds, trying to imply the pitch that is
somewhere between them.
