I asked a three of the strong studio folks (the ones who depend on this
for their main income) about the same issue.
All avoid this by having a written policy about missed lessons. One said
to expect that half will not be reliable when planning income.

One handles this by having students prepay a semester at a time--in a
13 week period, expect to meet (and pay for) 10 sessions. This leaves
flexibility for the conflicts that will happen.

Another charges for missed lessons with less than 24 hours notice,
with the possibility of getting the time during a scheduled "make-up
lesson week" per 'season'.

I have found it hard to enforce the pay for missed lessons when being
paid by the week. But little difficulty when prepaid this way. I do
agree to short term groups--2, 4, 6 session groups, paid at first
session.
When i was music librarian for the community orchestra, i had a routine
where students could not pay could sort music to earn lesson time.
