When parts in A are available, yes, pro players do use A clarinets. But
there are plenty of band parts in Bb written in ugly keys, and some
orchestral composers have forgotten of the A's existance. They don't
ALWAYS get the easy option out; however, professionals train to play in
any key so that it won't be so hard.
Heck, I cheat, sometimes, for orchestral work. Half of the ugly keys in
Messiah I played as written. The other half, I got real lazy and read
them on A clarinet, even though it was written for Bb. (Learning to sight
transpose between A and Bb parts is a good thing to do, as well.)
