Well, relative numbers have something to do with it--surely there are many
more guitar players around than clarinettists. There's not going to be much
financial incentive for a clarinet technician to write a book on clarinet
repair, or for a publisher to publish it. One suspects that the number of
clarinet players tempted to build their own horns from scratch is extremely
small.
